"To prepare the tart shells: Preheat oven to 350°F. Lightly coat a mini muffin tin with vegetable cooking spray. Set aside. Combine the butter and cream cheese in a mixing bowl. Using an electric mixer beat until combined. Add the flour and salt and blend until a soft dough forms. Working with scant 1 tablespoon of dough (about 13 to 14g) at a time, roll into a ball then press evenly into the bottom and up the sides of each muffin cup."
Pecan Tassies are bite-sized pecan pies made with a cream cheese–buttery tart shell. The tart shell combines room-temperature butter, cream cheese, all-purpose flour, and a pinch of salt to form a soft dough pressed into a mini muffin tin. The filling mixes melted butter, light brown sugar, light corn syrup, eggs, vanilla, salt, and toasted chopped pecans. Shells are chilled before filling. Each shell is filled with about one tablespoon of filling and baked. These minis are lightly sweet, nutty, freeze well, travel easily, and make excellent holiday gifts.
