George Amidei opened the diner in 1977, and Tony Amidei purchased it in 1990 and developed a signature green chili that became the menu's main attraction. In 2020 Tony sold the restaurant to longtime head cook Joe Sylling, whose children now work in the kitchen alongside employees with decades of service.
