Ixi'im presents an expansive tequila collection of 3,435 bottles and highlights tequila's renaissance and growing appreciation. The restaurant sits at the Chablé Yucatán hotel on Mexico's Yucatán peninsula in the former engine room of a 19th-century henequen hacienda. Floor-to-ceiling displays create a museum-like environment with standout bottles, including pieces decorated by Rufino Tamayo and a 1845 Brindis por México by José Cuervo in the private dining room. Ixi'im offers educational tequila tastings and serves around two dozen selections plus cocktails. The kitchen, led by Luis Ronzón and Jorge Vallejo, sources locally and draws on Maya agricultural techniques, Lebanese influence and the pib roasting tradition.
