Bub's Bakery is a 450-square-foot grab-and-go bakeshop at 325 Lafayette Street in Noho that produces pastries free of nine common allergens, including gluten, dairy, soy, nuts, and all animal products. The bakery was inspired by co-founder Jenn Saesue's experience with her husband's food intolerances and developed with James Beard–nominated baker Melissa Weller. Menu items include kouign amanns, oversized cinnamon rolls, savory Danishes, "egg-and-cheese" biscuit sandwiches, rice crispy bars, and pumpkin pie cups with cheesecake swirls. The shop features a yellow Zinc counter, serves Devoción Coffee espresso and seasonal beverages, and is open Wednesday through Sunday from 7am, opening September 25.
