Seafood Stuffed Mushrooms
"These seafood stuffed mushrooms are the ultimate small bite for any party. They're cheesy and filled with seafood. We were slightly concerned about the lack of seasoning. But the shallots, mozzarella cheese, and seasoned bread crumbs add the right amount of seasoning to let the seafood flavor shine. Whatever variety of mushrooms you choose, I would recommend using small ones. These seafood stuffed mushrooms are best when you can pop them in your mouth like bite-sized treats."
"Drizzle with a mixture of olive oil and half of the melted butter. Bake mushrooms in the oven at 350 degrees for 10 minutes. Drain off mushrooms and then set aside. Meanwhile, saute shallots until nice and caramelized. Dice the shrimp and crab meat into smaller pieces. Mix shallots, shrimp, crab meat, cheese, egg, and bread crumbs. Stuff mushrooms with a heaping scoop of mixture."
Small mushrooms are filled with a mixture of diced cooked shrimp, imitation crab, caramelized shallots, shredded mozzarella, eggs, and seasoned breadcrumbs. Mushrooms are trimmed, drizzled with olive oil and melted butter, and par-baked to release moisture. The stuffing is mixed, scooped into mushroom caps, drizzled with remaining butter, and baked until browned and heated through. Uniformly sized and finely chopped stuffing ingredients ensure balanced flavor and ease of eating. Small, bite-sized mushrooms are recommended for party servings. Optional modifications include adjusting seasoning and substituting minced clams if needed.
