Florence by the Water opens on February 13 to coincide the hotel's 100th anniversary, from the same operator who debuted L'Antica Pizzeria da Michele in Hollywood and Long Beach, and Florence Osteria & Piano Bar on Beverly Boulevard. This time, the Tuscan menu is an extension of the latter with dining that overlooks an outdoor pool."

Offerings include wagyu souvlaki, whipped ricotta, whole Argentine prawns, grilled calamari, fusilli all'Amatriciana, wood-fired pizzas, whole branzino with Meyer lemon herb relish, and chicken Milanese. The hotel's prior poolside restaurant Deme closed in 2025. Reservations are available on OpenTable. Joy filed a permit to open a Santa Monica location at the former Wahoo's Fish Tacos on Wilshire Boulevard. David Chang's Super Peach in Century City has drawn notable critical attention for its seafoam-green space and place within a global mall dining matrix.
