Cheese & Crack began as a food cart specializing in cheese and crackers, but the addition of a soft serve machine unexpectedly transformed the business. Owner William Steuernagel initially viewed the soft serve as a minor complement, but over a decade, it became the focal point of their menu, drawing large crowds and notable social media attention. Their signature sundae boasts combinations of velvety soft serve, toasted marshmallow fluff, and cinnamon cracker crumble, showcasing a creative fusion of flavors that has redefined their offerings and established a loyal customer base.
Toasted Marshmallow Fluff: Other Cheese & Crack sundaes come with layers of pudding, which demand a financially devastating number of egg yolks. The remaining bounty of egg whites whip into a meringue with corn syrup and sugar to become in-house marshmallow fluff.
More than a decade later, its sundaes have attracted serious lines and countless Instagram posts, and the little Kerns snack shop can churn out 200 to 300 a day in the summer.
